I researched tons of recipes for a classic cheese flan and came across this website called ‘School Recipes’. They have loads of old school recipes on there which is so exciting and I’m looking forward to trying out some more! My Review:


Now I absolutely live for hacks and tricks/tips...anything to make my life easier in the kitchen. So when it comes to making pastry, especially for a cheese flan, I would rather not make it myself! So I went on a mission to find an alcohol-free shortcrust pastry and realised that the ‘own brand’ versions from Morrisons and Asda were suitable (but please check yourself too).


This was really easy to roll out and saved a whole load of cooking time. Also, I did not blind bake this, but just put the filling straight into the pastry-lined tin.


For the mixture, I switched things around, by adding 6 eggs in and combining both cheddar cheese and Red Leicester cheese to make it extra cheesy AF! I also added a tiny bit of mustard, a dash of double cream (for extra flavour) and of course seasoned with white pepper and salt.


I also layered the mixture into the tin by placing most of the cheese into the pastry first and then pouring the liquid milky part. This was to ensure there was more cheese than milk and to prevent overflowing.


To be honest, I don’t think I even followed the recipe in the end and did my own foodie pro twist to it...you’re welcome. 👩‍🍳
